Peaches in balsamic reduction

One of my favourite quick and easy summer desserts. I love the sweet, salty, sticky and tart taste. Beautiful as is or serve with a dollop of cream or home-made vanilla ice cream.



— 3 white or yellow peaches, seeded and sliced in thin segments
— 2 tablespoons NiuLife balsamic style organic coconut vinegar (else use balsamic vinegar)
— 1 lime
— pinch of vanilla salt (else use unrefined salt and vanilla bean powder)
— a few torn fresh leaves of basil, mint and/or oregano 


Heat vinegar in a large frying pan. Add sliced peaches and cook on medium- high heat uncovered until the liquid reduces and has almost evaporated. Gently stir once or twice to prevent peaches from sticking to the pan. 

Dress with the juice of half a lime and season with a good pinch of vanilla salt. Garnish with a scattering of the fresh herbs and serve with lime wedges.
